Description

A vibrant antioxidant-rich hibiscus protein jello made with clean ingredients and naturally sweetened for a refreshing, guilt-free snack.


Ingredients

Scale
  • 2 cups (480ml) water
  • 3 bags pure hibiscus tea or 2 tbsp dried hibiscus petals
  • 1 packet (7g or about 1 tbsp) unflavored grass-fed gelatin powder
  • 1 to 2 tbsp natural stevia or erythritol
  • 1 tbsp fresh lemon or lime juice

Instructions

  1. Bring 1½ cups of water to a rolling boil in a small saucepan.
  2. Remove from heat and steep the hibiscus tea bags for 7 to 10 minutes until deep crimson-pink.
  3. Remove and squeeze the tea bags to release all flavor.
  4. Pour the remaining ½ cup of cold water into a medium bowl.
  5. Sprinkle the gelatin powder evenly over the cold water and let bloom for 3 to 5 minutes.
  6. Stir the sweetener and fresh lemon or lime juice into the hot hibiscus tea.
  7. Pour the hot tea over the bloomed gelatin mixture.
  8. Whisk vigorously for 1 to 2 minutes until completely smooth and dissolved.
  9. Pour the mixture into ramekins or a glass meal-prep container.
  10. Refrigerate for 3 to 4 hours until fully set and jiggly.
  11. Serve cold and enjoy as a refreshing high-protein snack.

Notes

Blooming the gelatin properly ensures a perfectly smooth texture without lumps. Adjust the sweetness to your preference using stevia or erythritol.
