Ingredients

- 1 1/2 cups shelled pistachios (unsalted)
- 1 3/4 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 3/4 cup unsalted butter (softened)
- 1 cup granulated sugar
- 1/4 cup honey
- 1 large egg
- 1 tsp almond extract
Instructions
- Pulse 1 cup of pistachios in a food processor until coarse.
- Finely chop the remaining pistachios for texture.
- Beat butter, sugar, and honey until pale and fluffy.
- Add egg and almond extract, then mix until smooth.
- Fold in ground pistachios, flour, baking powder, and salt.
- Stir in chopped pistachios.
- Chill dough for at least 1 hour.
- Roll dough into balls and place on a baking sheet.
- Bake at 165°C (330°F) for 10–12 minutes until edges are lightly golden.
- Allow cookies to cool before serving.
Notes
Chilling the dough enhances flavor and prevents excessive spreading. Almond extract intensifies the pistachio aroma beautifully.
