Description

Master the ultimate steakhouse dinner at home with juicy grilled steak, basted in garlic herb butter, served alongside perfectly crispy roasted potatoes seasoned with paprika and garlic. A classic restaurant-quality meal made simple.


Ingredients

  • 2 thick-cut steaks (Ribeye, Sirloin, or Flank steak), 180–220g each
  • 1 tbsp neutral oil (sunflower, grapeseed, or avocado oil)
  • 1 generous knob unsalted butter
  • 2 cloves garlic, crushed
  • Fresh thyme sprigs
  • Fresh rosemary sprigs
  • Coarse salt
  • Freshly ground black pepper
  • Fresh flat-leaf parsley, chopped
  • 500g small firm-fleshed potatoes
  • 2 tbsp extra virgin olive oil
  • 1 tsp smoked or sweet paprika
  • 1/2 tsp garlic powder
  • Salt, to taste
  • Freshly cracked black pepper, to taste

Instructions

  1. Preheat the oven to 200°C (390°F) fan-assisted.
  2. Wash and cut the potatoes into halves or uniform wedges.
  3. Toss the potatoes with olive oil, paprika, garlic powder, salt, and pepper until evenly coated.
  4. Arrange the potatoes cut-side down on a parchment-lined baking sheet.
  5. Roast for 35 to 40 minutes, flipping halfway through, until golden brown and crispy.
  6. Remove the steaks from the refrigerator 20 minutes before cooking.
  7. Pat the steaks completely dry and season generously with coarse salt and black pepper.
  8. Heat a cast-iron skillet over high heat until very hot.
  9. Add the neutral oil and sear the steaks according to your preferred doneness.
  10. During the final minute, add the butter, crushed garlic, thyme, and rosemary.
  11. Tilt the pan and continuously baste the steaks with the foaming herb butter.
  12. Transfer the steaks to a warm plate and loosely cover with foil.
  13. Allow the steaks to rest for 5 minutes before slicing against the grain.
  14. Serve alongside the crispy roasted potatoes.
  15. Drizzle with pan juices and garnish with fresh parsley before serving.

Notes

For the best crust, ensure the steaks are completely dry before searing. Always rest the meat after cooking to allow the juices to redistribute, resulting in a tender and flavorful steak.
