Description

Perfectly pan-seared salmon with irresistibly crispy skin, finished in a rich lemon garlic butter sauce with fresh parsley. An elegant restaurant-quality dinner that’s quick, flavorful, and easy to make at home.


Ingredients

  • 4 skin-on center-cut salmon fillets (150g to 180g each)
  • 1 tbsp neutral high-smoke-point oil
  • 1 tsp kosher salt
  • 1/2 tsp freshly cracked black pepper
  • 3 tbsp unsalted butter
  • 4 cloves garlic, finely minced
  • 3 tbsp fresh lemon juice
  • 1 tsp fresh lemon zest
  • 2 tbsp fresh Italian flat-leaf parsley, finely chopped

Instructions

  1. Remove the salmon from the refrigerator 15 minutes before cooking. Pat the fillets completely dry and season both sides with kosher salt and black pepper.
  2. Heat the oil in a large skillet over medium-high heat. Place the salmon skin-side down and gently press each fillet with a spatula for 10 seconds. Cook undisturbed for 5 to 6 minutes until the skin is crisp and golden.
  3. Flip the salmon carefully and reduce the heat to medium-low. Add the butter and minced garlic to the pan. As the butter melts, continuously spoon the garlic butter over the salmon for about 2 minutes.
  4. Add the fresh lemon juice and lemon zest to the skillet, swirling to combine with the butter sauce.
  5. Sprinkle with the chopped parsley and simmer for 1 minute until the sauce slightly thickens.
  6. Spoon the lemon garlic butter sauce over the salmon and serve immediately with the crispy skin facing up.

Notes

Patting the salmon completely dry is the key to achieving perfectly crispy skin. Avoid moving the fillets while they cook to allow a beautiful golden crust to develop naturally.
