Description

This Roasted Chicken with Garlic & Herbs is juicy, aromatic, and filled with comforting flavors of lemon, thyme, and rosemary. The garlic cloves roast into buttery perfection — perfect for spreading on crusty bread or whisking into pan juices for a quick sauce.

Chicken:

  • 1 whole chicken (about 45 lbs), or 6 bone-in thighs
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter (or ghee for dairy-free)
  • 1 lemon, halved
  • Salt and pepper, to taste

Garlic & Herbs:

  • 2 bulbs garlic, cloves separated (don’t peel)
  • 1 tbsp fresh thyme leaves
  • 1 tbsp fresh rosemary, chopped
  • 1 tsp dried herbes de Provence
  • 1 cup dry white wine or chicken broth

Optional Add-Ons:

  • ½ cup baby potatoes or pearl onions
  • 1 tbsp Dijon mustard (for extra tang)

Instructions

  1. Step 1 – Prepare the Chicken: Preheat oven to 400°F (200°C). Pat the chicken dry with paper towels. Season generously inside and out with salt, pepper, thyme, and rosemary. Stuff cavity with lemon halves and a few garlic cloves.
  2. Step 2 – Brown for Flavor: Heat olive oil and butter in an oven-safe skillet or Dutch oven. Sear the chicken on all sides for 3–4 minutes per side until golden brown. Remove from heat and scatter remaining garlic cloves around the chicken.
  3. Step 3 – Add Wine & Roast: Pour white wine (or broth) around the chicken. Sprinkle with herbes de Provence. Roast 1 hour 15 minutes, basting halfway through with pan juices. If using thighs, roast about 40–45 minutes until the internal temp reaches 165°F (74°C).
  4. Step 4 – Rest & Serve: Let the chicken rest 10 minutes before carving. Mash a few roasted garlic cloves into the pan juices for an instant sauce. Serve with crusty bread.

Notes

💡 Pro Tip: Roast baby potatoes or pearl onions in the same pan for a complete one-pan meal. The garlic-infused drippings make the best natural gravy.
