- 4–5 lbs beef brisket, trimmed
- 2 tbsp olive oil
- 3 large onions, sliced
- 5 cloves garlic, minced
- 3 tbsp tomato paste
- 2 cups beef broth
- 1 cup red wine (or extra broth)
- 3 tbsp honey or brown sugar
- 2 tbsp apple cider vinegar
- 2 tsp smoked paprika
- 1 tsp thyme (dried or fresh)
- Salt & black pepper, to taste
Instructions
- Preheat oven: Set to 325°F (160°C).
- Sear brisket: Season brisket generously with salt and pepper. Heat oil in a Dutch oven, sear brisket on both sides until browned. Remove and set aside.
- Build flavor: In the same pot, sauté onions until golden. Add garlic and tomato paste, cooking 2–3 minutes.
- Deglaze: Pour in wine (or broth), scraping browned bits. Add broth, honey, vinegar, paprika, and thyme. Stir well.
- Braise: Return brisket to pot, cover tightly, and transfer to oven. Cook 3–4 hours until tender.
- Rest: Remove from oven, let brisket rest 20–30 minutes before slicing against the grain.
Notes
For even deeper flavor, braise brisket a day ahead, refrigerate overnight, then reheat gently before serving. The flavors intensify beautifully.
