Description

These Orange Pistachio Cookies are buttery, tender, and bursting with bright citrus flavor. Made with fresh orange zest, a soft vanilla cookie base, and a sweet, tangy orange glaze, each cookie delivers a delicate melt-in-your-mouth texture with beautifully golden edges. Finished with a generous sprinkle of finely chopped pistachios, these homemade cookies offer the perfect balance of fragrant orange, creamy sweetness, and nutty crunch. Perfect for holiday cookie trays, spring gatherings, or enjoying with a warm cup of tea.

Ingredients

Scale
  • For the Cookie Base:
  • 2 1/4 cups (281 g) all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup (150 g) granulated sugar
  • 2 tbsp fresh orange zest (~2 medium oranges)
  • 1 cup (226 g / 2 sticks) unsalted butter, softened
  • 1 large egg, room temperature
  • 1 tsp pure vanilla extract
  • For the Glaze and Topping:
  • 1 cup (120 g) powdered sugar, sifted
  • 3 tbsp freshly squeezed orange juice
  • 1 tsp fresh orange zest
  • 1 cup (125 g) shelled raw or lightly toasted pistachios, finely chopped

Instructions

  1. Preheat Oven and Prep Pans: Preheat your oven to 350°F (175°C) and line two large baking sheets with parchment paper.
  2. Whisk Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, and salt to ensure even leavening. Set aside.
  3. Rub Sugar with Zest and Cream Butter: In a small bowl, rub the fresh orange zest into the granulated sugar with your fingertips until fragrant and yellow. Transfer to a large bowl and beat with the softened butter for 2–3 minutes until light, pale, and fluffy.
  4. Beat in Egg and Vanilla: Add the room-temperature egg and pure vanilla extract to the butter-sugar mixture, beating until completely smooth and emulsified.
  5. Incorporate Dry Flour Mixture: Gradually add the dry flour mixture to the wet base, mixing on low speed just until a cohesive, soft dough forms without dry flour streaks.
  6. Portion and Flatten Dough: Drop tablespoon-sized portions (~25g each) of dough onto the prepared baking sheets, spacing them about 2 inches apart. Gently flatten the tops slightly with your palm or the bottom of a clean glass.
  7. Bake Until Edges Are Barely Golden: Bake at 350°F (175°C) for 12–14 minutes, or until the bottom edges turn a delicate light golden brown while the tops remain soft and pale.
  8. Cool, Glaze, and Finish: Rest cookies on the baking sheet for 2 minutes before transferring them to a wire cooling rack to cool completely. Whisk together the powdered sugar, orange juice, and 1 teaspoon of fresh orange zest. Dip the cooled cookie tops into the glaze, sprinkle generously with finely chopped pistachios, and let set for 15 minutes.

Notes

  • Always Rub Zest into Sugar: Rubbing fresh orange zest into granulated sugar breaks open micro-pockets in the zest, releasing natural oils directly into the sucrose crystals for a vibrant citrus flavor that extract alone cannot match.
  • Finely Chop the Pistachios: Chop shelled pistachios finely so they stick neatly to the freshly glazed surface without weighing down or falling off the cookie.
  • Glaze Completely Cooled Cookies: Ensure cookies are 100% cool before dipping in the orange glaze; warm cookies will melt the glaze and cause it to slide right off.
