- 1 lb boneless, skinless chicken breasts, cut into bite-sized cubes
- 1 tbsp olive oil
- 1 tsp paprika
- 1/2 tsp garlic powder
- Salt and black pepper, to taste
- 4 tbsp unsalted butter
- 4 cloves garlic, minced
- 1 tbsp Dijon mustard
- 1 tbsp fresh lemon juice
- 1/2 tsp red pepper flakes
- 1/4 cup fresh Italian parsley, finely chopped
- 8 oz spaghetti or linguine noodles
- 3 cups low-sodium chicken broth
Instructions
- Toss the cubed chicken breasts with olive oil, paprika, garlic powder, salt, and black pepper until evenly coated.
- Heat a large deep skillet over medium-high heat. Add the seasoned chicken and sear for 4 to 5 minutes, turning occasionally, until golden brown. Transfer to a plate and set aside.
- Reduce heat to medium. Melt 2 tablespoons of butter in the same skillet, scraping up any browned bits.
- Add the minced garlic, Dijon mustard, lemon juice, and red pepper flakes. Whisk continuously for 1 minute until fragrant.
- Pour in the chicken broth and bring to a boil.
- Add the spaghetti or linguine, breaking in half if needed, and submerge completely in the liquid.
- Reduce heat to medium-low and simmer uncovered for 9 to 11 minutes, stirring frequently, until the pasta is al dente and most of the liquid has reduced.
- Return the chicken and any accumulated juices to the skillet.
- Stir in the remaining 2 tablespoons of butter and the chopped parsley.
- Toss everything together for 1 to 2 minutes over low heat until a thick, glossy sauce coats the noodles.
- Serve immediately and enjoy.
Notes
For extra flavor, use freshly squeezed lemon juice and freshly grated garlic. Stir the pasta frequently while simmering to ensure even cooking and prevent sticking.
