Description

Tender golden-seared chicken tossed with linguine in a rich cowboy butter sauce made with garlic, Dijon mustard, lemon juice, red pepper flakes, and fresh parsley. This easy one-pan pasta delivers bold flavor with minimal cleanup.

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized cubes
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • Salt and black pepper, to taste
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tbsp Dijon mustard
  • 1 tbsp fresh lemon juice
  • 1/2 tsp red pepper flakes
  • 1/4 cup fresh Italian parsley, finely chopped
  • 8 oz spaghetti or linguine noodles
  • 3 cups low-sodium chicken broth

Instructions

  1. Toss the cubed chicken breasts with olive oil, paprika, garlic powder, salt, and black pepper until evenly coated.
  2. Heat a large deep skillet over medium-high heat. Add the seasoned chicken and sear for 4 to 5 minutes, turning occasionally, until golden brown. Transfer to a plate and set aside.
  3. Reduce heat to medium. Melt 2 tablespoons of butter in the same skillet, scraping up any browned bits.
  4. Add the minced garlic, Dijon mustard, lemon juice, and red pepper flakes. Whisk continuously for 1 minute until fragrant.
  5. Pour in the chicken broth and bring to a boil.
  6. Add the spaghetti or linguine, breaking in half if needed, and submerge completely in the liquid.
  7. Reduce heat to medium-low and simmer uncovered for 9 to 11 minutes, stirring frequently, until the pasta is al dente and most of the liquid has reduced.
  8. Return the chicken and any accumulated juices to the skillet.
  9. Stir in the remaining 2 tablespoons of butter and the chopped parsley.
  10. Toss everything together for 1 to 2 minutes over low heat until a thick, glossy sauce coats the noodles.
  11. Serve immediately and enjoy.

Notes

For extra flavor, use freshly squeezed lemon juice and freshly grated garlic. Stir the pasta frequently while simmering to ensure even cooking and prevent sticking.
