Description
These easy banana oatmeal cookies are naturally sweet, soft, and chewy, with wholesome oats, dark chocolate chunks, and your choice of raisins or crunchy nuts.
Ingredients
Scale
- 3 ripe bananas, mashed
- 1/3 cup unsweetened applesauce
- 1/4 cup almond milk
- 1 tsp pure vanilla extract
- 2 cups oats, rolled or quick oats
- 1 tsp ground cinnamon
- 1 cup dark chocolate chunks, sugar-free
- 1/4 cup raisins or chopped nuts, walnuts or almonds
Instructions
- Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.
- In a large mixing bowl, stir together the mashed bananas, applesauce, almond milk, and vanilla extract until well combined.
- Stir in the oats and ground cinnamon until fully incorporated into the banana mixture.
- Gently fold in the dark chocolate chunks and your choice of raisins or chopped nuts until evenly distributed throughout the dough.
- Scoop the dough onto your prepared baking sheet. Because these cookies lack flour and traditional baking fats, they will not spread much as they bake. Use the back of a spoon or your fingers to gently flatten and shape them into cookie rounds.
- Bake for 15–20 minutes, or until the cookies are firm to the touch and lightly golden around the edges.
- Allow the cookies to cool completely before serving.
Notes
These cookies do not spread much during baking, so gently flatten and shape them before baking. Let them cool completely so they can firm up before serving.
