Description

This No Bake Pineapple Heaven Cheesecake Dessert is a creamy, refreshing treat made with a buttery graham cracker crust, fluffy pineapple cheesecake filling, and a light whipped topping. It’s an easy make-ahead dessert that’s perfect for warm days and family gatherings.


Ingredients

  • 2 cups (200g) graham cracker crumbs
  • 1/3 cup (65g) granulated sugar or brown sugar
  • 1/2 cup (115g) unsalted butter, melted
  • 16 oz (450g / 2 blocks) full-fat cream cheese, softened to room temperature
  • 1 cup (120g) powdered sugar, sifted
  • 1 tsp pure vanilla extract
  • 1 can (20 oz / 565g) crushed pineapple in juice, very well drained
  • 1 container (8 oz / 225g) whipped topping, thawed, or 1.5 cups heavy cream whipped to stiff peaks
  • 1 container (8 oz / 225g) whipped topping or fresh whipped cream
  • 1/2 cup toasted sweetened coconut flakes or chopped maraschino cherries, optional

Instructions

  1. In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter until the mixture resembles wet sand.
  2. Press the crust firmly into the bottom of a 9×13-inch baking dish.
  3. Refrigerate the crust for 15 minutes to firm up.
  4. In a large mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract with an electric mixer on medium-high speed for 2 to 3 minutes until light, fluffy, and completely smooth.
  5. Gently fold the thoroughly drained crushed pineapple into the cream cheese mixture.
  6. Fold in one 8 oz container of thawed whipped topping until no white streaks remain.
  7. Spread the pineapple cream cheese mixture evenly over the chilled graham cracker crust.
  8. Top with the remaining container of whipped topping and smooth the surface with an offset spatula.
  9. Cover tightly and refrigerate for at least 6 hours, preferably overnight.
  10. Garnish with toasted coconut flakes or chopped maraschino cherries just before serving.

Notes

Drain the crushed pineapple very well before adding it to the filling so the cheesecake layer stays thick and creamy. For the best texture, chill the dessert for at least 6 hours or overnight before slicing.
