Ingredients
- For the Creamy Chickpea Chocolate Core:
- 1 1/2 cups (240 g) cooked chickpeas, thoroughly drained, rinsed, and patted dry
- 1/2 cup (120 g) creamy cashew butter, smooth and well-stirred
- 1 tbsp (15 ml) pure agave syrup (or maple syrup)
- 50 g (1.8 oz) dark chocolate, taken from the 150 g bar, melted
- For the Dark Chocolate Shell and Coating:
- 100 g (3.5 oz) dark chocolate, the remaining portion of the 150 g bar, chopped
- 1 tbsp (15 ml) coconut oil
Instructions
- Prepare and Dry Chickpeas: Place 1 1/2 cups (240 g) of cooked chickpeas in a colander and rinse thoroughly under clean running water. Drain completely, then transfer the chickpeas to several layers of paper towels. Pat them carefully until the surface is completely dry, removing as much excess moisture as possible to prevent the chocolate truffle filling from becoming watery.
- Purée the Chickpea Base: Transfer the thoroughly dried chickpeas to a high-powered food processor. Process on high speed for 1–2 minutes, scraping down the sides of the bowl as needed, until the chickpeas form a completely smooth, thick, creamy paste without noticeable large pieces.
- Incorporate Cashew Butter and Agave Syrup: Add 1/2 cup (120 g) of smooth, well-stirred cashew butter and 1 tablespoon (15 ml) of pure agave syrup or maple syrup to the food processor. Blend again until the ingredients are fully combined and the mixture becomes thick, silky, and homogeneous.
- Blend Melted Dark Chocolate into the Filling: Place 50 g (1.8 oz) of dark chocolate into a microwave-safe bowl. Microwave in 20-second bursts, stirring thoroughly between each interval, until completely melted and smooth. Pour the melted chocolate into the food processor with the chickpea and cashew butter mixture. Blend until fully incorporated and a glossy, dark, thick chocolate truffle dough forms.
- Chill the Chocolate Truffle Dough: Transfer the prepared chickpea chocolate mixture into a clean bowl and cover tightly with plastic wrap. Refrigerate for 20–30 minutes, or until the mixture becomes sufficiently firm to scoop and roll without sticking excessively to your hands.
- Shape the Chocolate Truffle Balls: Remove the chilled truffle mixture from the refrigerator and divide it into 12–15 equal portions using a small cookie scoop or spoon. Roll each portion gently between clean palms until it forms a smooth, evenly sized sphere. Arrange the shaped truffle balls on a tray lined with parchment paper.
- Chill the Shaped Truffle Spheres: Place the tray of shaped chocolate truffles back into the refrigerator for 15–20 minutes. This additional chilling step firms up the centers and helps them maintain their beautiful round shape when dipped into the warm melted chocolate coating.
- Prepare the Dark Chocolate Coating: In a small microwave-safe heatproof bowl, combine the remaining 100 g (3.5 oz) of chopped dark chocolate with 1 tablespoon (15 ml) of coconut oil. Microwave in 20-second intervals, stirring thoroughly between each burst, until the chocolate is completely melted, smooth, and glossy. Avoid overheating to preserve a silky coating consistency.
- Dip, Decorate, and Set the Chocolate Shell: Using a fork, carefully dip each thoroughly chilled chickpea chocolate truffle into the melted dark chocolate coating, turning gently until completely covered. Lift each truffle out and allow the excess chocolate to drip back into the bowl. Place the coated truffles on the parchment-lined tray and drizzle with decorative lines of the remaining melted chocolate if desired. Refrigerate for 15–20 minutes, or until the chocolate shells have set completely. Serve chilled and enjoy their wonderfully smooth, fudgy centers and irresistible dark chocolate coating!
Notes
- Pat Chickpeas Completely Dry: Excess surface moisture can make the truffle filling too wet or runny. After draining and rinsing, dry the cooked chickpeas thoroughly with paper towels before processing to achieve a thick, smooth, creamy chocolate center that holds its shape.
- Use Smooth Cashew Butter: Choose creamy, well-stirred cashew butter for the best texture and flavor. Its mild, naturally sweet, cream-like taste blends beautifully with dark chocolate and helps soften any remaining chickpea flavor more effectively than stronger-tasting nut butters.
- Dip the Truffles While Cold: Always chill the shaped truffle balls thoroughly before dipping them into warm melted chocolate. Cold centers help the chocolate coating firm up quickly while preventing the truffles from softening or losing their rounded shape.
