Description

Pumpkin Pecan Cobbler is a luscious no-bake layered dessert made with espresso-dipped ladyfingers, fluffy vanilla pudding mascarpone cream, fresh bananas, and a delicate cocoa finish.


Ingredients

  • 1 (3.4 oz) instant vanilla pudding mix
  • 1 1/2 cups cold milk
  • 1 (14 oz) sweetened condensed milk
  • 8 oz mascarpone or cream cheese, softened
  • 1 1/2 cups heavy whipping cream
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon fine salt
  • 3 to 4 ripe bananas, sliced
  • Unsweetened cocoa powder for dusting
  • Caramel drizzle (optional)
  • 1 cup cooled espresso or strong coffee (optional soak)
  • 1 tablespoon brown sugar (optional)
  • 1 cup milk (optional soak)
  • 1/2 teaspoon vanilla (optional soak)

Instructions

  1. In a bowl, whisk pudding mix, cold milk, and sweetened condensed milk for 2 minutes.
  2. Refrigerate 10 minutes to thicken.
  3. In a separate bowl, whip heavy cream to stiff peaks.
  4. Add vanilla extract and salt and whip briefly to combine.
  5. Beat mascarpone until smooth in a large bowl.
  6. Add pudding mixture and beat until creamy.
  7. Gently fold whipped cream into mascarpone mixture in 2 to 3 additions.
  8. Prepare soak by mixing espresso and optional sugar or milk and vanilla.
  9. Quickly dip ladyfingers 1 second per side in soak.
  10. Arrange a single layer in a 9×13-inch or 8×8-inch dish.
  11. Spread one-third of the cream filling over ladyfingers.
  12. Add a layer of sliced bananas.
  13. Repeat layers, finishing with cream on top.
  14. Cover and refrigerate 8 to 12 hours or overnight.
  15. Dust with cocoa powder before serving.
  16. Drizzle caramel if desired before slicing.

Notes

Do not oversoak ladyfingers to prevent mushy layers. Chill at least 6 hours for best texture, ideally overnight for clean slices and rich flavor.
