Description

These easy no-bake Amish Style Lemon Cream Parfaits feature layers of bright lemon filling, fluffy vanilla whipped cream, and buttery cookie crumbs for a refreshing dessert ready in minutes.

  • 2 cups Millstone Acres Natural Lemon Pie Filling Ready to Use Amish Style Clean Label Dessert
  • 1 cup heavy whipping cream, chilled
  • ¼ cup powdered sugar
  • 1 tsp pure vanilla extract
  • 1 cup shortbread cookies or graham crackers, coarsely crushed
  • Fresh blueberries, optional
  • Fresh mint sprigs, optional

Instructions

  1. Place a mixing bowl and beaters in the freezer for 5 minutes.
  2. Add the chilled heavy whipping cream, powdered sugar, and vanilla extract to the chilled bowl.
  3. Beat on medium-high speed for 3 to 4 minutes until stiff peaks form.
  4. Add 2 tablespoons of crushed shortbread cookies or graham crackers to the bottom of 4 dessert glasses or jars.
  5. Spoon a layer of lemon pie filling over the cookie crumbs.
  6. Add a layer of whipped vanilla cream.
  7. Repeat the layers of lemon filling and whipped cream until the glasses are full.
  8. Top with an extra dollop of whipped cream.
  9. Sprinkle with additional cookie crumbs and garnish with blueberries or mint if desired.
  10. Refrigerate for 15 minutes before serving.

Notes

For the fluffiest whipped cream, make sure both the cream and mixing equipment are thoroughly chilled. These parfaits can be assembled several hours ahead and refrigerated until serving.
