Description

Golden, crispy-on-the-outside and fluffy-on-the-inside mashed potato puffs — a cheesy, bite-sized snack perfect for using up leftovers!

Ingredients

Scale
  • (Makes 12–15 puffs)

For the Potato Puffs

  • 2 cups mashed potatoes (cold leftovers work great)
  • 1 cup shredded cheddar cheese (or your favorite blend)
  • 2 large eggs
  • 3 Tbsp all-purpose flour
  • 2 Tbsp unsalted butter, melted
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp paprika
  • ¼ tsp black pepper
  • 1 tsp salt (adjust to taste)
  • 2 Tbsp chopped chives or green onions (optional)

For the Baking

  • Nonstick cooking spray or melted butter for greasing
  • Mini muffin pan (for even crisp puffs)

Instructions

  1. Preheat & Prepare Pan: Preheat oven to 400°F (200°C). Grease a mini muffin pan with butter or nonstick spray to ensure crisp edges.
  2. Mix the Batter: In a large bowl, combine mashed potatoes, cheese, eggs, and flour. Add butter, garlic powder, onion powder, paprika, salt, and pepper. Mix until smooth and creamy but thick enough to hold shape. Fold in chives for a fresh flavor boost. 💡 Pro Tip: If the mixture feels too loose, add 1 extra tablespoon of flour.
  3. Fill the Muffin Pan: Spoon mixture into muffin cups, filling each about ¾ full. Smooth the tops lightly with a spoon for even browning.
  4. Bake: Bake for 20–25 minutes, or until the tops are golden and puffed. Let cool for 5 minutes before removing from the pan. 💡 Tip: For an extra crispy finish, broil for the last 2 minutes!
  5. Serve: Serve warm with dipping sauces like sour cream, ranch, or garlic aioli.

Notes

Best served fresh from the oven. Reheat leftovers in the oven or air fryer for crispness. Great as party appetizers or side dishes!
