- 4 chicken breasts or cutlets
- Salt
- Black pepper
- Italian seasoning
- 1/3 cup flour (optional)
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1/2 onion, diced
- 4 to 5 garlic cloves, minced
- 2 tablespoons tomato paste
- 3/4 cup chicken broth
- 3/4 cup heavy cream
- 1/2 cup Parmesan cheese
- 1/2 cup sun-dried tomatoes, chopped
- 1/4 teaspoon red pepper flakes (optional)
- Spinach (optional)
- Fresh basil (optional)
- Lemon (optional)
Instructions
- Pound or slice chicken breasts to even thickness.
- Season chicken with salt, pepper, and Italian seasoning.
- Lightly dredge in flour if desired.
- Heat olive oil and butter in a large skillet.
- Sear chicken 3 to 4 minutes per side until golden.
- Remove chicken and set aside.
- Sauté diced onion 3 to 4 minutes until softened.
- Add garlic and cook 30 seconds.
- Stir in tomato paste and cook 1 to 2 minutes.
- Add chicken broth and scrape browned bits from pan.
- Simmer 2 minutes.
- Lower heat and add heavy cream, Parmesan, sun-dried tomatoes, and red pepper flakes.
- Simmer gently until slightly thickened.
- Return chicken to the skillet.
- Simmer 6 to 10 minutes until chicken reaches 165°F.
- Add spinach or basil if using and finish with lemon juice if desired.
- Serve hot.
Notes
Pounding chicken to even thickness helps it cook evenly. Simmer sauce gently to prevent cream from separating.
