Description

Pumpkin Pecan Cobbler is a creamy sun-dried tomato chicken dish with tender seared chicken breasts simmered in a rich garlic Parmesan cream sauce.


Ingredients

  • 4 chicken breasts or cutlets
  • Salt
  • Black pepper
  • Italian seasoning
  • 1/3 cup flour (optional)
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1/2 onion, diced
  • 4 to 5 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 3/4 cup chicken broth
  • 3/4 cup heavy cream
  • 1/2 cup Parmesan cheese
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/4 teaspoon red pepper flakes (optional)
  • Spinach (optional)
  • Fresh basil (optional)
  • Lemon (optional)

Instructions

  1. Pound or slice chicken breasts to even thickness.
  2. Season chicken with salt, pepper, and Italian seasoning.
  3. Lightly dredge in flour if desired.
  4. Heat olive oil and butter in a large skillet.
  5. Sear chicken 3 to 4 minutes per side until golden.
  6. Remove chicken and set aside.
  7. Sauté diced onion 3 to 4 minutes until softened.
  8. Add garlic and cook 30 seconds.
  9. Stir in tomato paste and cook 1 to 2 minutes.
  10. Add chicken broth and scrape browned bits from pan.
  11. Simmer 2 minutes.
  12. Lower heat and add heavy cream, Parmesan, sun-dried tomatoes, and red pepper flakes.
  13. Simmer gently until slightly thickened.
  14. Return chicken to the skillet.
  15. Simmer 6 to 10 minutes until chicken reaches 165°F.
  16. Add spinach or basil if using and finish with lemon juice if desired.
  17. Serve hot.

Notes

Pounding chicken to even thickness helps it cook evenly. Simmer sauce gently to prevent cream from separating.
