Description

Juicy pork chops seared in crispy bacon fat and finished in a rich maple Dijon cream sauce topped with crunchy bacon and fresh thyme.


Ingredients

  • 4 bone-in or boneless pork chops (about 1 inch thick)
  • 4 slices thick-cut bacon
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • Salt and black pepper to taste
  • 2 tbsp real maple syrup
  • 2 tbsp Dijon mustard
  • ½ cup chicken broth
  • ½ cup heavy cream
  • 2 cloves garlic, minced
  • Fresh thyme sprigs for garnish

Instructions

  1. In a large heavy skillet over medium heat, cook the bacon slices until crispy.
  2. Remove the bacon from the skillet and set aside, leaving the rendered bacon fat in the pan.
  3. Once cooled, chop the bacon into pieces.
  4. Season both sides of the pork chops with garlic powder, onion powder, salt, and black pepper.
  5. Place the pork chops into the hot bacon fat and sear for 3 to 4 minutes per side until golden brown.
  6. Remove the pork chops from the skillet and set aside on a plate.
  7. Reduce the heat to medium and add the minced garlic to the skillet.
  8. Sauté the garlic for 1 minute until fragrant.
  9. Pour in the chicken broth and scrape up the browned bits from the bottom of the skillet.
  10. Whisk in the Dijon mustard, maple syrup, and heavy cream.
  11. Bring the sauce to a gentle simmer for 2 to 3 minutes until slightly thickened.
  12. Return the pork chops and their juices to the skillet.
  13. Simmer for another 2 to 3 minutes until the pork chops are heated through and reach 63°C (145°F).
  14. Spoon the creamy sauce over the pork chops.
  15. Top with chopped crispy bacon and fresh thyme before serving hot.

Notes

For extra flavor, use thick-cut smoked bacon. Allow the pork chops to rest briefly before serving to keep them juicy and tender.
