Description
Juicy pork chops seared in crispy bacon fat and finished in a rich maple Dijon cream sauce topped with crunchy bacon and fresh thyme.

- 4 bone-in or boneless pork chops (about 1 inch thick)
- 4 slices thick-cut bacon
- 1 tsp garlic powder
- ½ tsp onion powder
- Salt and black pepper to taste
- 2 tbsp real maple syrup
- 2 tbsp Dijon mustard
- ½ cup chicken broth
- ½ cup heavy cream
- 2 cloves garlic, minced
- Fresh thyme sprigs for garnish
Instructions
- In a large heavy skillet over medium heat, cook the bacon slices until crispy.
- Remove the bacon from the skillet and set aside, leaving the rendered bacon fat in the pan.
- Once cooled, chop the bacon into pieces.
- Season both sides of the pork chops with garlic powder, onion powder, salt, and black pepper.
- Place the pork chops into the hot bacon fat and sear for 3 to 4 minutes per side until golden brown.
- Remove the pork chops from the skillet and set aside on a plate.
- Reduce the heat to medium and add the minced garlic to the skillet.
- Sauté the garlic for 1 minute until fragrant.
- Pour in the chicken broth and scrape up the browned bits from the bottom of the skillet.
- Whisk in the Dijon mustard, maple syrup, and heavy cream.
- Bring the sauce to a gentle simmer for 2 to 3 minutes until slightly thickened.
- Return the pork chops and their juices to the skillet.
- Simmer for another 2 to 3 minutes until the pork chops are heated through and reach 63°C (145°F).
- Spoon the creamy sauce over the pork chops.
- Top with chopped crispy bacon and fresh thyme before serving hot.
Notes
For extra flavor, use thick-cut smoked bacon. Allow the pork chops to rest briefly before serving to keep them juicy and tender.
