Description

These Lemon Meltaway Cookies are buttery, delicate, and bursting with bright, fresh lemon flavor. Made with a tender shortbread-style cookie base enriched with cornstarch and fresh lemon zest, each cookie delivers an irresistible melt-in-your-mouth texture. Finished with a smooth, tangy lemon icing and optional fresh zest, these soft and citrusy cookies are perfect for spring gatherings, holiday cookie trays, or enjoying with a warm cup of tea.

Ingredients

Scale
  • For the Cookie Base:
  • 1 cup (226 g / 2 sticks) unsalted butter, softened
  • 3/4 cup (150 g) granulated sugar
  • 2 tbsp fresh lemon zest
  • 2 cups (250 g) all-purpose flour
  • 2 tbsp cornstarch
  • 1/2 tsp salt
  • For the Smooth Lemon Icing:
  • 220 g (~1 3/4 cups) powdered sugar, sifted
  • 2 tbsp fresh lemon juice
  • Optional Garnish: Fresh lemon zest

Instructions

  1. Preheat Oven and Prep Pans: Preheat your oven to 350°F (175°C) and line two large baking sheets with parchment paper.
  2. Cream Butter, Sugar, and Zest: In a large mixing bowl, beat the softened unsalted butter, granulated sugar, and fresh lemon zest together with an electric mixer for 2–3 minutes until light, pale, and fluffy.
  3. Whisk Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, cornstarch, and salt to ensure even distribution and a tender crumb.
  4. Combine Dry Mix into Butter: Gradually add the dry flour mixture into the creamed butter on low speed, mixing just until a soft, cohesive shortbread dough forms.
  5. Portion and Roll Balls: Roll tablespoon-sized portions (~18g each) of dough into smooth, round balls. Arrange them at least 2 inches apart on the prepared baking sheets.
  6. Bake Until Set: Bake for 8–10 minutes, or until the bottoms are barely lightly golden while the tops remain pale and set.
  7. Flatten Tops While Warm: Immediately after removing from the oven, gently press the tops of the warm cookies with the flat bottom of a clean glass to create a flat, smooth surface. Allow cookies to cool completely on the baking sheet.
  8. Mix Icing and Finish: Whisk the powdered sugar and fresh lemon juice together in a small bowl until a thick, spreadable icing forms. Adjust with a drop more juice or powdered sugar if needed. Spread over completely cooled cookies, top with optional fresh lemon zest, and let set for 15 minutes.

Notes

  • Do Not Skip the Cornstarch: Cornstarch is the secret ingredient behind the meltaway texture! It softens the flour matrix to deliver that signature melt-in-your-mouth bite.
  • Flatten Warm Cookies Immediately: Press warm cookies with a glass right as they come out of the oven. If you wait until they cool, the tender shortbread structure will crack.
  • No Eggs or Leavening Needed: This traditional shortbread-style meltaway relies entirely on butter fat and cornstarch. No baking powder, baking soda, or eggs are required!
