Description
These no-bake Blueberry Lemon Protein Bites are creamy, tangy, and bursting with juicy blueberries. Packed with protein and fiber, they’re the perfect healthy snack or post-workout treat — ready in minutes!
Ingredients
Scale
Base Mixture:
- 1 cup low-fat cottage cheese
- ½ cup vanilla protein powder (or unflavored)
- ¼ cup almond flour
- 1 tbsp honey or maple syrup
- Zest and juice of 1 lemon
- ½ tsp vanilla extract
Add-Ins:
- ⅓ cup fresh or frozen blueberries
- 1 tbsp chia seeds (optional for fiber boost)
For Rolling (optional):
- ¼ cup crushed freeze-dried blueberries or coconut flakes
Instructions
- Step 1 – Blend the Base: In a food processor, combine cottage cheese, protein powder, almond flour, honey, lemon juice, zest, and vanilla. Blend until smooth and creamy — thick like cheesecake filling.
- Step 2 – Fold in the Blueberries: Gently fold the blueberries and chia seeds into the mixture with a spatula. Don’t overmix — you want those juicy berry bursts!
- Step 3 – Shape the Bites: Use a cookie scoop or spoon to roll the mixture into 1-inch balls. If it’s too soft, chill the mixture for 15 minutes before rolling.
- Step 4 – Coat & Chill: Roll each ball in crushed freeze-dried blueberries or coconut flakes for a fun texture. Refrigerate for 1–2 hours, or freeze for 20 minutes to firm up quickly.
