Description

Fresh, low-carb cucumber boats filled with a creamy chicken and bacon mixture—perfect for a light keto-friendly meal or snack.


Ingredients

Scale
  • 3 large cucumbers
  • 2 cups cooked shredded chicken
  • 6 slices cooked bacon (crumbled)
  • ½ cup cream cheese
  • ¼ cup mayonnaise
  • ½ tsp garlic powder
  • ½ tsp salt
  • ½ tsp black pepper
  • Shredded cheese (optional)
  • Fresh herbs (optional)

Instructions

  1. Slice cucumbers lengthwise and scoop out the seeds.
  2. Mix shredded chicken, crumbled bacon, cream cheese, mayonnaise, garlic powder, salt, and black pepper.
  3. Spoon the filling into the cucumber halves.
  4. Sprinkle shredded cheese or fresh herbs on top if desired.
  5. Refrigerate for 20–30 minutes if preferred.
  6. Serve fresh and chilled.

Notes
