  • 1.5 lbs ground beef (80/20 blend) or 50/50 ground beef and ground pork
  • ½ cup Italian seasoned breadcrumbs
  • â…“ cup whole milk
  • 1 large egg, beaten
  • ½ cup freshly grated Parmesan cheese
  • 6 cloves garlic, minced
  • 1 tbsp Worcestershire sauce
  • 1 tsp onion powder
  • 1 tsp dried Italian seasoning
  • Salt, to taste
  • Black pepper, to taste
  • 2 tbsp unsalted butter
  • 2 cloves garlic, minced
  • 1 tbsp all-purpose flour
  • ½ cup heavy cream
  • â…“ cup beef broth
  • ¼ cup grated Parmesan cheese
  • 2 tbsp fresh Italian parsley, finely chopped

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine breadcrumbs, milk, beaten egg, Parmesan cheese, garlic, Worcestershire sauce, onion powder, Italian seasoning, salt, and black pepper.
  3. Let the mixture rest for 5 minutes to form a thick panade.
  4. Add the ground meat and gently mix until just combined.
  5. Shape the mixture into a loaf on a parchment-lined baking sheet or place it in a loaf pan.
  6. Bake for 45 to 50 minutes or until the internal temperature reaches 160°F (71°C).
  7. Allow the meatloaf to rest while preparing the glaze.
  8. Melt the butter in a saucepan over medium heat and sauté the garlic for 1 minute.
  9. Whisk in the flour and cook briefly to form a roux.
  10. Slowly whisk in the heavy cream and beef broth and simmer until thickened.
  11. Stir in the Parmesan cheese until smooth and creamy.
  12. Slice the meatloaf and spoon the garlic-Parmesan glaze over each serving.
  13. Garnish with fresh parsley and serve warm.

Notes

Avoid overmixing the meat mixture to keep the meatloaf tender. Let the meatloaf rest for several minutes before slicing to retain its juices.
