Description

These Apple Cinnamon Muffins are soft, moist, and bursting with tender apple chunks — topped with an optional buttery cinnamon streusel for the perfect cozy treat!

Ingredients

Scale
  • 1 ¾ cups all-purpose flour
  • ¾ cup brown sugar, packed
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • 1 tsp ground cinnamon
  • ¼ tsp nutmeg
  • ½ tsp salt
  • ⅓ cup vegetable oil (or melted butter)
  • 2 large eggs
  • ½ cup milk (whole or 2%)
  • 1 tsp vanilla extract
  • 1 ½ cups peeled, diced apples (Granny Smith or Honeycrisp)
  • ¼ cup flour (for streusel, optional)
  • ¼ cup brown sugar (for streusel, optional)
  • 2 Tbsp cold butter, cubed (for streusel, optional)
  • ½ tsp cinnamon (for streusel, optional)

Instructions

  1. Prep the Oven & Pan: Preheat oven to 375°F (190°C). Line a 12-cup muffin pan with paper liners or grease with nonstick spray.
  2. Mix the Dry Ingredients: In a large bowl, whisk together flour, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. Combine Wet Ingredients: In another bowl, whisk eggs, milk, oil, and vanilla until smooth.
  4. Combine & Fold: Pour the wet mixture into the dry ingredients and stir gently until just combined — do not overmix. Fold in diced apples using a spatula. (💡 Pro Tip: Overmixing can make muffins tough. Mix just until no dry streaks remain.)
  5. Add Streusel (Optional): Combine flour, brown sugar, butter, and cinnamon using your fingers or a fork until crumbly. Sprinkle evenly over each muffin cup.
  6. Bake: Bake for 18–20 minutes, or until a toothpick inserted into the center comes out clean. Cool for 5 minutes in the pan, then transfer to a wire rack.
  7. Serve: Enjoy warm with butter or a drizzle of honey. These muffins stay moist for days!

Notes

Store leftover muffins in an airtight container at room temperature for up to 3 days, or freeze for up to 2 months. Reheat in the microwave for 15 seconds for that fresh-baked flavor!
