  • 2 tbsp extra virgin olive oil
  • 1 tbsp raw honey or pure maple syrup
  • Tiny pinch of salt
  • 1/4 cup sunflower seeds or chopped toasted walnuts (optional)

Instructions

  1. Pour the fresh lemon juice into a large mixing bowl.
  2. As you grate or slice the apples, add them directly to the lemon juice and toss to coat.
  3. Coarsely grate the carrots and add them to the bowl with the apples.
  4. Add the raisins or dried cranberries if using.
  5. In a small bowl or jar, whisk together the olive oil, honey, and a pinch of salt until smooth and emulsified.
  6. Pour the dressing over the carrot and apple mixture.
  7. Gently toss everything together until evenly coated.
  8. Cover the bowl and refrigerate for 20 to 30 minutes.
  9. Just before serving, sprinkle with sunflower seeds or toasted walnuts for added crunch.
