Ingredients

- 2 cups all-purpose flour
- 1 tsp instant yeast
- 1/2 tsp baking soda
- 1/2 tsp sea salt
- 2 tbsp unsalted butter
- 3/4 cup warm water
- Coarse salt
Instructions
- Whisk flour, yeast, baking soda, and salt.
- Cut in cold butter until crumbly.
- Add water and form a stiff dough.
- Cover and rest for 1–2 hours.
- Roll dough thin, fold, and repeat lamination 3 times.
- Cut into squares and dock with a fork.
- Place on baking sheet, mist with water, and sprinkle salt.
- Bake at 200°C for 10–12 minutes.
- Cool completely on a rack.
Notes
Rolling the dough very thin and laminating properly is key to achieving the classic flaky cracker texture.
