Description

A juicy, protein-packed healthy stuffed chicken filled with savory sautéed mushrooms, garlic, shallots, and herbs, finished with a light creamy touch for richness without heaviness.


Ingredients

  • 4 large chicken breasts
  • 500g baby bella (cremini) mushrooms, finely chopped
  • 3 cloves garlic, minced
  • 1 shallot, finely diced
  • 1 tbsp fresh thyme
  • 2 tbsp goat cheese or light cream cheese
  • Olive oil
  • Salt and pepper

Instructions

  1. Heat a skillet over medium-high heat with a splash of olive oil. Cook mushrooms until all liquid evaporates and they are browned. Add shallots, garlic, and thyme. Season at the end and let cool completely.
  2. Place your hand on each chicken breast and cut a deep pocket without slicing all the way through.
  3. Stuff each chicken breast with 2–3 tablespoons of the cooled mushroom mixture and secure with toothpicks.
  4. Sear chicken in a hot oven-safe skillet for 3 minutes per side, then bake at 200°C for 12–15 minutes until internal temperature reaches 74°C.

Notes

Make sure the mushroom filling is fully cooled and dry before stuffing to avoid soggy chicken and ensure a rich, concentrated flavor.
