Description

Soft and naturally sweet banana oat cookies made with wholesome oats, ripe bananas, and warm cinnamon for an easy healthy snack or breakfast treat.


Ingredients

  • 2 large ripe bananas
  • 1 1/2 cups old-fashioned rolled oats
  • 1 tsp ground cinnamon
  • 1/3 cup dark chocolate chips (optional)
  • 1/3 cup chopped walnuts (optional)
  • 1/3 cup dried cranberries (optional)

Instructions

  1. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. Mash the ripe bananas in a large bowl until completely smooth.
  3. Add the oats and cinnamon to the banana puree.
  4. Stir in chocolate chips, walnuts, or dried cranberries if desired.
  5. Mix thoroughly until the oats are fully moistened.
  6. Let the mixture rest for 5 minutes.
  7. Scoop portions onto the prepared baking sheet.
  8. Flatten each mound into a cookie shape.
  9. Bake for 12 to 15 minutes until lightly golden and firm.
  10. Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

The riper the bananas, the sweeter and softer the cookies will be. These cookies are naturally sweetened and perfect for meal prep.
