Description

Grilled Peach Burrata Salad with Honey Balsamic is a stunning summer salad featuring smoky grilled peaches, creamy burrata, peppery arugula, toasted pine nuts, and a sweet-tangy homemade honey balsamic dressing. Perfect for entertaining or a light seasonal meal.


Ingredients

  • 3 ripe but firm peaches, halved and pitted
  • 1 tbsp neutral oil (avocado or canola)
  • 2 balls (4 oz / 115g each) fresh burrata cheese, room temperature
  • 4 cups fresh baby arugula or mixed greens
  • 1/4 cup pine nuts or sliced almonds, toasted
  • Fresh basil leaves, torn
  • Flaky sea salt, to taste
  • Freshly cracked black pepper, to taste
  • 3 tbsp aged balsamic vinegar
  • 1.5 tbsp raw honey
  • 1/3 cup high-quality extra virgin olive oil
  • 1 tsp Dijon mustard
  • 1 small garlic clove, finely minced
  • Salt and black pepper, to taste

Instructions

  1. In a small bowl or jar, whisk together the balsamic vinegar, honey, Dijon mustard, garlic, salt, and pepper. Slowly drizzle in the olive oil while whisking continuously until the dressing is fully emulsified.
  2. Preheat a grill or cast-iron grill pan over medium-high heat. Brush the cut sides of the peaches with neutral oil. Grill cut-side down for 3 to 4 minutes until grill marks appear. Flip and grill for another 1 to 2 minutes until slightly softened. Slice into wedges.
  3. Arrange the baby arugula or mixed greens on a large serving platter. Drizzle lightly with some of the honey balsamic dressing and toss gently.
  4. Arrange the grilled peach wedges over the greens. Tear the burrata into pieces and place around the salad. Sprinkle with toasted pine nuts, fresh basil, flaky sea salt, and black pepper. Finish with an extra drizzle of the honey balsamic dressing and serve immediately.

Notes

Use peaches that are ripe yet still firm so they hold their shape on the grill. Bring the burrata to room temperature before serving for the creamiest texture. Toast the pine nuts or almonds just before assembling for maximum flavor and crunch.
