Description

Grilled Halloumi and Watermelon Salad is the ultimate summer salad featuring golden grilled halloumi, juicy watermelon, crisp cucumber, peppery arugula, fresh mint, and a bright lemon dressing finished with a drizzle of balsamic glaze. It’s a refreshing combination of sweet, salty, and savory flavors perfect for warm-weather meals.


Ingredients

  • 8 oz halloumi cheese, sliced into 1/2-inch slabs
  • 4 cups seedless watermelon, cubed into 1-inch pieces
  • 1 cup English cucumber, sliced into half-moons
  • 2 cups baby arugula or mixed spring greens
  • 1/4 cup red onion, paper-thinly sliced
  • 1/4 cup fresh mint leaves, torn
  • 2 tbsp extra virgin olive oil (for brushing and dressing)
  • 2 tbsp fresh lemon juice
  • 1 tbsp extra virgin olive oil
  • 1 tbsp thick balsamic glaze
  • Flaky sea salt, to taste
  • Freshly cracked black pepper, to taste

Instructions

  1. Pat the halloumi slices completely dry with paper towels and lightly brush both sides with olive oil.
  2. Preheat a grill or grill pan over medium-high heat. Grill the halloumi for 1 to 2 minutes per side until crisp and deeply golden with distinct grill marks. Transfer to a plate.
  3. Arrange the arugula or mixed greens on a large serving platter. Top with the watermelon cubes, cucumber slices, and thinly sliced red onion.
  4. Place the warm grilled halloumi over the salad. Scatter torn mint leaves on top. Whisk together the lemon juice and olive oil, drizzle over the salad, then finish with balsamic glaze, flaky sea salt, and freshly cracked black pepper. Serve immediately.

Notes

Serve the salad immediately while the halloumi is warm for the best texture. Choose ripe, sweet watermelon and high-quality halloumi for the best balance of flavors.
