Description

This Grilled Chicken Avocado Salad is a fresh, flavorful meal packed with juicy citrus-marinated chicken, creamy avocado, crisp vegetables, and a bright cilantro-lime vinaigrette.

  • 2 large (1 lb / 450g) boneless, skinless chicken breasts
  • 2 tbsp extra-virgin olive oil
  • 2 tbsp fresh lime juice
  • 1 tsp garlic powder
  • 1/2 tsp ground cumin
  • 1/2 tsp fine sea salt
  • 1/2 tsp black pepper
  • 6 cups mixed greens (romaine, spinach, or arugula)
  • 2 large ripe Hass avocados, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup English cucumber, sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup extra-virgin olive oil
  • 3 tbsp fresh lime juice
  • 1/4 cup fresh cilantro, finely chopped
  • 1 tsp honey or agave nectar
  • 1 pinch sea salt
  • 1 pinch black pepper

Instructions

  1. Whisk the olive oil, lime juice, garlic powder, cumin, salt, and pepper in a shallow bowl.
  2. Coat the chicken breasts evenly with the marinade and let them marinate at room temperature for 10 to 15 minutes.
  3. Preheat an outdoor grill or cast-iron grill pan over medium-high heat to about 400°F (200°C).
  4. Grill the chicken for 5 to 6 minutes per side until the internal temperature reaches 165°F (74°C).
  5. Transfer the chicken to a cutting board and let it rest for 5 minutes before slicing into thin strips.
  6. In a small jar or bowl, whisk together the olive oil, lime juice, chopped cilantro, honey, sea salt, and black pepper until smoothly combined.
  7. Arrange the mixed greens, cherry tomatoes, cucumber, red onion, and sliced avocados in a large salad bowl.
  8. Top the salad with the warm grilled chicken slices.
  9. Drizzle with the cilantro-lime vinaigrette and serve immediately.

Notes

Let the grilled chicken rest for 5 minutes before slicing to help keep it juicy. Add the avocado just before serving for the freshest texture and flavor.
