Description

A fresh, tangy, and flavorful slaw tossed in a delicious miso-ginger dressing, perfect as a light side dish.


Ingredients

  • 2 cups shredded red cabbage
  • 1 cup shredded carrots
  • 1/2 cup chopped cilantro
  • 2 tablespoons white miso paste
  • 1 tablespoon freshly grated ginger
  • 2 tablespoons rice vinegar
  • 1 tablespoon lime juice
  • 1 tablespoon maple syrup
  • 1 teaspoon sesame oil
  • Salt
  • Pepper

Instructions

  1. In a small bowl, whisk miso paste, ginger, vinegar, lime juice, maple syrup, sesame oil, salt, and pepper until smooth.
  2. In a large mixing bowl, combine cabbage, carrots, and cilantro.
  3. Pour the dressing over and toss to coat evenly.
  4. Let the slaw sit in the refrigerator for at least 15 minutes before serving.
