Ingredients
- For the Fudgy Chocolate Cookie Base:
- 1/2 cup (1 stick / 113 g) unsalted butter, softened to room temperature
- 1/2 cup (100 g) packed brown sugar
- 1/2 cup (100 g) granulated sugar
- 1 large egg, room temperature
- 2 tsp pure vanilla extract
- 1 1/2 cups (187 g) all-purpose flour
- 1/2 cup (50 g) unsweetened cocoa powder, sifted
- 1/2 tsp baking soda
- 1/2 tsp fine salt
- For the Warm Coconut-Pecan Custard Frosting:
- 1/4 cup (50 g) packed brown sugar
- 1/2 cup (120 ml) milk (whole milk preferred)
- 1 large egg yolk, room temperature
- 2 tbsp (28 g) unsalted butter
- 1/2 tsp fine salt
- 1 tsp pure vanilla extract
- 1 cup (85 g) sweetened coconut flakes
- 1/2 cup (60 g) chopped pecans
- For the Chocolate Drizzle:
- 1/4 cup (45 g) semisweet chocolate chips
Instructions
- Cream Butter and Sugars: In a large mixing bowl or stand mixer fitted with the paddle attachment, beat the softened unsalted butter, packed brown sugar, and granulated sugar together on medium-high speed for 2–3 minutes until smooth, pale, and creamy.
- Add Egg and Vanilla: Add the room-temperature egg and pure vanilla extract to the creamed butter mixture. Beat on medium speed until completely smooth and fully incorporated.
- Combine Dry Flour Base: In a separate medium mixing bowl, whisk together the all-purpose flour, sifted unsweetened cocoa powder, baking soda, and fine salt until evenly combined and free of lumps.
- Form Chocolate Cookie Dough: Gradually add the prepared dry cocoa mixture to the creamed butter base, mixing on low speed just until a thick, soft chocolate cookie dough forms. Avoid overmixing to preserve the tender, fudgy texture.
- Portion and Flatten Large Discs: Preheat your oven to 350°F (175°C) and line two large baking sheets with parchment paper. Divide the chocolate cookie dough into 8 equal portions, approximately 70 g each, using a large cookie scoop. Arrange the portions about 3 inches apart on the prepared baking sheets and gently flatten each mound into a thick disc approximately 1/2 inch tall.
- Bake Until Fudgy and Set: Bake the chocolate cookies at 350°F (175°C) for 10–11 minutes, or until the edges are firm and set while the centers remain soft and slightly underdone. Allow the cookies to rest on the warm baking sheets for 5 minutes before carefully transferring them to a wire cooling rack to cool completely.
- Toast Coconut and Pecans: Place the sweetened coconut flakes and chopped pecans in a dry skillet over medium heat. Toast for 3–5 minutes, stirring continuously, until lightly golden brown and wonderfully fragrant. Remove from the heat immediately to prevent burning and set aside.
- Cook Coconut-Pecan Custard: In a medium saucepan, whisk together the packed brown sugar, milk, room-temperature egg yolk, unsalted butter, fine salt, and pure vanilla extract. Cook over medium-low heat, stirring constantly with a spatula, until the mixture thickens into a glossy, creamy custard and reaches 160°F (71°C). Remove from the heat and stir in the toasted coconut flakes and chopped pecans until evenly distributed. Allow the coconut-pecan frosting to cool until thick and spreadable.
- Frost, Drizzle, and Serve: Place the semisweet chocolate chips in a microwave-safe bowl and melt in 20-second bursts, stirring between each interval until smooth. Spoon generous dollops of the cooled coconut-pecan custard frosting onto each completely cooled chocolate cookie disc, gently spreading the frosting toward the edges. Drizzle the melted chocolate over the frosting in thin, beautiful ribbons. Allow the chocolate to set briefly before serving!
Notes
- Cook the Custard to 160°F: Do not rush the coconut-pecan frosting. Heat the milk, brown sugar, butter, and egg yolk mixture to 160°F (71°C), stirring constantly, until it thickens into a glossy, cooked custard that holds its shape beautifully on top of the cookies.
- Always Toast the Nuts and Coconut: Toast the sweetened coconut flakes and chopped pecans in a dry skillet before adding them to the custard. This releases their natural aromatic oils and develops the wonderfully nutty, toasted flavor that makes German chocolate desserts so delicious.
- Cool Cookies Completely Before Frosting: Make sure both the chocolate cookie bases and coconut-pecan custard frosting have cooled before assembling. Applying warm frosting to warm cookies can cause the butter fats to soften and the topping to run off the sides.
