Description

Succulent shrimp seared to perfection and finished in a silky garlic butter white wine sauce with fresh lemon and parsley. This elegant Shrimp Scampi is quick, flavorful, and perfect for any occasion.


Ingredients

  • 600g large shrimp, peeled and deveined with tails on
  • 1 tbsp extra virgin olive oil
  • 1/2 tsp kosher salt
  • 1/4 tsp freshly cracked black pepper
  • 60g unsalted butter, divided
  • 5 large garlic cloves, finely minced
  • 120ml dry white wine
  • 2 tbsp fresh lemon juice
  • 1/4 tsp crushed red pepper flakes
  • 20g fresh Italian flat-leaf parsley, finely chopped

Instructions

  1. Pat the shrimp dry and season with salt and black pepper.
  2. Heat the olive oil and 30g butter in a large skillet over medium-high heat. Sear the shrimp for 1½ to 2 minutes per side until pink and opaque, then transfer to a plate.
  3. Reduce the heat to medium-low. Add the garlic and red pepper flakes to the skillet and cook for 60–90 seconds until fragrant without browning.
  4. Pour in the white wine and lemon juice, scraping up the browned bits from the pan. Simmer for 3–4 minutes until the liquid has reduced by half.
  5. Lower the heat and whisk in the remaining cold butter cubes until the sauce becomes smooth and glossy.
  6. Return the shrimp to the skillet, toss to coat in the garlic butter sauce, sprinkle with fresh parsley, and serve immediately.

Notes

Avoid overcooking the shrimp—they only need a couple of minutes per side. Serve with pasta, crusty bread, or steamed rice to soak up the rich garlic butter sauce.
