Description
Frozen Watermelon Mint Slushie is a refreshing summer drink made with frozen watermelon, fresh mint, lime juice, and coconut water. This icy slushie is naturally sweet, hydrating, and can easily be transformed into a cocktail with rum, tequila, or vodka.

- 5 cups fresh seedless watermelon, cut into cubes and frozen solid
- 1/4 cup fresh lime juice (about 2 large limes)
- 12–15 fresh mint leaves
- 2–3 tbsp pure honey, agave nectar, or simple syrup
- 1/2 cup cold coconut water or sparkling water (plus more if needed)
- Fresh mint sprigs, for garnish
- Lime wheels, for garnish
- 6 oz (180ml) white rum, silver tequila, or vodka (optional)
Instructions
- Arrange the watermelon cubes in a single layer on a parchment-lined baking sheet and freeze for at least 4 hours or overnight until solid.
- Add the frozen watermelon, lime juice, mint leaves, honey or agave, and coconut water to a high-speed blender. If making the cocktail version, add the rum, tequila, or vodka.
- Blend on high for 1 to 2 minutes until thick, smooth, and slushy. Add a splash of additional coconut water or sparkling water if needed to help the blender.
- Pour immediately into chilled glasses and garnish with fresh mint sprigs and lime wheels. Serve right away while icy and refreshing.
Notes
Freeze the watermelon in a single layer to prevent clumping. Adjust the sweetener depending on the sweetness of your watermelon. Serve immediately for the best slushy texture.
