Frozen Raspberry Lemonade Cheesecake Bars are a refreshing no-bake summer dessert with a buttery graham cracker crust, a light and creamy lemon cheesecake filling, and a beautiful swirl of sweet-tart raspberry sauce. Perfect for hot days, parties, and make-ahead entertaining.
Ingredients
- 1 1/2 cups graham cracker crumbs (about 10–12 full sheets)
- 1/3 cup unsalted butter, melted
- 2 tbsp granulated sugar
- 1/2 tsp lemon zest
- 16 oz (2 blocks) full-fat cream cheese, softened
- 1 cup heavy whipping cream, cold
- 3/4 cup powdered sugar
- 1/3 cup freshly squeezed lemon juice
- 1 tbsp fresh lemon zest
- 1 tsp pure vanilla extract
- 1 cup fresh or frozen raspberries
- 2 tbsp granulated sugar
- 1 tbsp lemon juice
Instructions
- Line an 8×8-inch baking pan with parchment paper. Mix the graham cracker crumbs, melted butter, granulated sugar, and lemon zest until evenly combined. Press firmly into the bottom of the pan and freeze while preparing the filling.
- Heat the raspberries, granulated sugar, and lemon juice until the berries soften and release their juices. Mash well, strain through a fine-mesh sieve to remove the seeds, and allow the raspberry purée to cool completely.
- Beat the softened cream cheese, powdered sugar, lemon juice, lemon zest, and vanilla extract until smooth. In a separate bowl, whip the cold heavy cream to stiff peaks, then gently fold it into the cream cheese mixture until fully incorporated.
- Spread the lemon cheesecake filling over the chilled crust. Spoon the cooled raspberry purée over the top and swirl gently with a knife or toothpick. Cover and freeze for at least 6 hours or overnight until firm. Slice into bars and serve slightly softened.
Notes
For the cleanest slices, let the bars sit at room temperature for 5 to 10 minutes before cutting with a warm knife. Freshly squeezed lemon juice gives the brightest flavor, and freezing overnight provides the best texture.
