Description
This High-Protein Cottage Cheese Bark is a creamy frozen treat made with blended cottage cheese, naturally sweetened with maple syrup or honey, then topped with fresh berries and optional coconut or chocolate chips. It’s an easy, refreshing, protein-packed dessert or snack.

- 500g full-fat (4%) or 2% cottage cheese
- 2 to 3 tbsp pure maple syrup or honey
- 1 tsp pure vanilla extract or vanilla bean paste
- 75g fresh or frozen blueberries
- 75g fresh or frozen strawberries, hulled and sliced
- 2 tbsp unsweetened shredded coconut flakes or dark chocolate chips (optional)
Instructions
- Add the cottage cheese, maple syrup or honey, and vanilla extract to a high-powered blender or food processor.
- Blend for 60 to 90 seconds until completely smooth and creamy.
- Taste and adjust the sweetness if needed.
- Line a large baking sheet or baking pan with parchment paper.
- Pour the blended cottage cheese mixture onto the center of the parchment.
- Spread into an even layer about 1/4 to 1/2 inch thick.
- Scatter the blueberries and sliced strawberries evenly over the surface.
- Gently press the fruit into the mixture.
- Sprinkle with shredded coconut or chocolate chips if using.
- Freeze for 2 to 3 hours until completely firm.
- Lift the frozen sheet from the pan using the parchment paper.
- Break into rustic bark pieces and serve immediately.
Notes
Blend the cottage cheese until completely smooth for the creamiest texture. Store leftover bark in an airtight freezer container and enjoy straight from the freezer for the best consistency.
