Description

These White Chocolate Raspberry Cookies are irresistibly soft, chewy, and bursting with bright, tangy raspberry flavor. Made with creamy white chocolate chips, vibrant freeze-dried raspberries, and a rich buttery cookie dough, each cookie features delicately golden edges and a tender, melt-in-your-mouth center. A light sprinkle of flaky sea salt perfectly balances the sweetness of the white chocolate and the tartness of the berries. These beautiful bakery-style cookies are perfect for holiday cookie trays, special celebrations, or enjoying with a cold glass of milk.

Ingrédients

Scale
  • For the Cookie Dough Base:
  • 3 cups (375 g) all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp sea salt
  • 1 cup (226 g / 2 sticks) unsalted butter, cool room temperature
  • 1 cup (200 g) packed light brown sugar
  • 1 cup (200 g) granulated sugar
  • 2 large eggs, room temperature
  • 1 tbsp pure vanilla extract
  • 1/4 tsp pure almond extract (optional, for enhanced berry profile)
  • For the Inclusions and Finishing:
  • 1 cup (170 g) white chocolate chips or chopped chunks
  • 1 cup (20 g) freeze-dried raspberries, crushed into small pieces
  • Flaky sea salt, for finishing the tops of warm cookies

Instructions

  1. Preheat Oven and Prep Pans: Preheat your oven to 350°F (175°C) and line two large baking sheets with parchment paper.
  2. Whisk Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking soda, baking powder, and sea salt to ensure even leavening and salt distribution. Set aside.
  3. Cream Butter and Sugars: In a large mixing bowl, beat the cool room-temperature unsalted butter, packed light brown sugar, and granulated sugar together with an electric mixer for 2–3 minutes until smooth, light, and pale.
  4. Add Eggs and Extracts: Beat in the eggs one at a time, followed by the pure vanilla extract and optional almond extract, mixing until fully incorporated and glossy.
  5. Incorporate Dry Flour Mix: Gradually add the dry flour mixture to the wet butter base, mixing on low speed just until combined without dry streaks remaining.
  6. Fold in Chocolate and Freeze-Dried Raspberries: Gently fold in the 1 cup of white chocolate chips and 1 cup of crushed freeze-dried raspberries using a rubber spatula until evenly distributed throughout the dough.
  7. Portion and Arrange Dough: Scoop 2-tablespoon portions (~40g each) of dough and place them on the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake Until Edges Are Set: Bake at 350°F (175°C) for 10–12 minutes, or until the edges are lightly golden and set while the centers remain pale and soft.
  9. Finish with Flaky Salt and Cool: Immediately sprinkle the tops lightly with flaky sea salt. Leave the cookies to rest on the warm baking sheets for 5 minutes before transferring them to a wire cooling rack to cool completely.

Notes

  • MUST Use Freeze-Dried Raspberries: Never substitute fresh or frozen raspberries in this specific recipe! Fresh or frozen berries release excessive water during baking, causing soggy dough pockets and gummy centers. Freeze-dried berries yield rich tart flavor with zero excess moisture.
  • Add Flaky Sea Salt: Don’t skip the sprinkle of flaky sea salt right when the cookies leave the oven! The sharp salt cuts through the intense sweetness of the white chocolate chips.
  • Cool Room-Temperature Butter: Ensure your butter is soft enough to yield under pressure, but not warm or greasy, so your dough balls hold their shape without spreading flat.
