Description

Soft apple cookies made with sweet apple cider, warm cinnamon and nutmeg, finely diced apples, and finished with a smooth cider glaze.

Ingrédients

Scale
  • 1 cup (2 sticks) unsalted butter, softened
  • 1/2 cup granulated sugar
  • 3/4 cup brown sugar, packed
  • 1 large egg
  • 1/4 cup nonalcoholic apple cider
  • 3 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp salt
  • 1 large apple, peeled and finely diced
  • 2 cups powdered sugar
  • 3 tbsp nonalcoholic apple cider
  • 1/2 tsp ground cinnamon

Instructions

  1. Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, nutmeg, and salt.
  3. In a large mixing bowl, cream the softened butter, granulated sugar, and packed brown sugar together for 2 to 3 minutes until light and fluffy.
  4. Beat in the egg and the 1/4 cup of apple cider until well combined.
  5. Gradually fold the dry flour mixture into the wet ingredients just until combined. Gently fold in the finely diced apple pieces.
  6. Drop the dough into mounds about 1.5 inches wide onto the prepared baking sheets, leaving about 2 inches of space between each cookie.
  7. Bake for 10–12 minutes, or until the centers and edges are set. Let the cookies rest on the baking sheets for 5 minutes before transferring to wire racks to cool completely.
  8. To make the glaze, whisk the powdered sugar, 3 tbsp of apple cider, and ground cinnamon together in a small bowl until completely smooth.
  9. Drizzle the glaze generously over the cooled cookies. Allow the glaze to set before serving or storing.

Notes

Use regular nonalcoholic apple cider, not apple cider vinegar. Finely dice the apples so they distribute evenly, and cool the cookies completely before glazing so the topping sets properly.
