Description

Rich chocolate cookies topped with soft, gooey marshmallows, silky melted chocolate, and crushed peppermint candies for the ultimate hot cocoa-inspired treat.

Ingrédients

Scale
  • ½ cup (1 stick) unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup packed light brown sugar
  • 1 large egg, room temperature
  • 1 tsp pure vanilla extract
  • 1 cup all-purpose flour, spooned and leveled
  • ½ cup unsweetened cocoa powder
  • 1 tsp baking soda
  • ¼ tsp salt
  • 12 large marshmallows, cut in half horizontally
  • ½ cup semi-sweet chocolate chips
  • 1 tsp coconut oil or butter
  • ¼ cup crushed peppermint candies or candy canes

Instructions

  1. Preheat your oven to 350°F and line a large baking sheet with parchment paper or a silicone baking mat.
  2. In a large mixing bowl, cream the softened butter, granulated sugar, and light brown sugar together on medium speed for about 3 minutes until light, fluffy, and smooth.
  3. Add the room-temperature egg and pure vanilla extract to the butter mixture, beating until well combined and fully incorporated.
  4. In a separate bowl, whisk together the flour, unsweetened cocoa powder, baking soda, and salt. Gradually add the dry mixture to the wet ingredients, mixing on low speed just until a soft, chocolate dough forms.
  5. Scoop dough into 12 equal balls, about 2 tablespoons each, and arrange them on the prepared baking sheet with 2 inches of space between them. Bake for 8 to 10 minutes until the edges are just set.
  6. Remove the sheet from the oven. Immediately press one half of a marshmallow, cut side down, firmly onto the center of each warm cookie. Return the cookies to the oven for 1 to 2 minutes, just until the marshmallows soften and puff slightly.
  7. Let cookies cool on the sheet for 5 minutes. Melt the semi-sweet chocolate chips and coconut oil in the microwave in 20-second bursts. Drizzle melted chocolate over the puffed marshmallows and immediately sprinkle with crushed peppermint candies before serving.

Notes

Press the marshmallow onto the cookies immediately after the first bake so it sticks while the cookies are warm. Add the peppermint candies right after drizzling the chocolate so they adhere before the chocolate sets.
