Description

Buttery hazelnut cookies dipped in glossy semi-sweet chocolate and generously topped with roasted hazelnuts for a rich, crunchy finish.

Ingrédients

Scale
  • 1 cup (2 sticks) unsalted butter, softened to room temperature
  • 1/2 cup granulated sugar
  • 1 tsp pure vanilla extract
  • 2 cups all-purpose flour, spooned and leveled
  • 1/2 tsp salt
  • 1/2 cup finely chopped hazelnuts
  • 2 cups semi-sweet chocolate chips
  • 1 tbsp coconut oil
  • 1 cup chopped roasted hazelnuts, for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.
  2. In a large mixing bowl, beat the softened butter and granulated sugar together for about 2 minutes until light and fluffy. Mix in the vanilla extract.
  3. Gradually add the all-purpose flour, salt, and finely chopped hazelnuts. Mix on low speed just until a cohesive cookie dough forms.
  4. Scoop tablespoon-sized portions of dough, roll them into smooth balls, and slightly flatten them into thick discs on your prepared baking sheet.
  5. Bake for 12–14 minutes, or until the cookie bottoms are lightly golden brown. Transfer the cookies to a wire rack to cool completely before dipping.
  6. In a microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil. Heat in 30-second bursts, stirring well after each interval, until completely smooth and glossy.
  7. Dip each cooled cookie entirely into the melted chocolate. Use a fork to lift the cookie out, tap off excess chocolate, and set it on a parchment-lined pan.
  8. Generously sprinkle the tops and sides of the wet chocolate coating with chopped roasted hazelnuts. Allow the chocolate coating to set completely before serving.

Notes

Toast the chopped hazelnuts in a dry skillet over medium heat for 3–5 minutes until fragrant for deeper nutty flavor. Coconut oil helps create a smooth, glossy chocolate coating, and the dipped cookies can be refrigerated for 10–15 minutes for a quick set.
