Description

Bright, colorful rainbow cookies infused with fruity gelatin flavors and rolled in sparkling sugar for a fun, festive treat that is soft, sweet, and bursting with vibrant colors.


Ingredients

  • 1 cup unsalted butter, softened
  • ¾ cup granulated white sugar
  • 1 large egg, room temperature
  • 1 tsp pure vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 4 small boxes (3 oz each) flavored gelatin powder in assorted colors
  • ½ cup extra granulated sugar for rolling

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Beat the softened butter and sugar together for 3 to 4 minutes until light and fluffy.
  3. Add the egg and vanilla extract and beat until fully incorporated.
  4. Whisk together the flour, baking powder, and salt in a separate bowl.
  5. Gradually mix the dry ingredients into the butter mixture until a soft dough forms.
  6. Divide the dough evenly into 4 separate bowls.
  7. Knead 3 tablespoons of a different flavored gelatin powder into each dough portion until evenly colored.
  8. Scoop the dough into 1-inch balls and roll each ball smooth between your palms.
  9. Roll each dough ball in granulated sugar until fully coated.
  10. Place the dough balls 2 inches apart on the prepared baking sheet.
  11. Bake for 8 to 10 minutes until the tops are cracked and set without browning.
  12. Allow the cookies to rest on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
