Description

This Masterclass Fiesta Lime Chicken With Avocado features juicy lime-marinated chicken topped with a fresh avocado salsa made with tomatoes, cilantro, corn, and red onion. It’s a vibrant, healthy dinner that’s bursting with bold citrus flavor and perfect for any occasion.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 60ml fresh lime juice
  • 2 tbsp extra virgin olive oil
  • 1 tbsp honey
  • 2 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp kosher salt
  • 1/2 tsp freshly cracked black pepper
  • 2 ripe Hass avocados, diced
  • 150g cherry tomatoes, quartered
  • 60g grilled corn kernels (optional)
  • 30g red onion, finely minced
  • 15g fresh cilantro, chopped
  • 1 tbsp fresh lime juice
  • A pinch of sea salt

Instructions

  1. Whisk together the lime juice, olive oil, honey, garlic, cumin, smoked paprika, salt, and pepper.
  2. Place the chicken in a shallow dish or zip-top bag and pour the marinade over it.
  3. Cover and refrigerate for 30 to 60 minutes.
  4. In a bowl, combine the diced avocados, cherry tomatoes, corn, red onion, and cilantro.
  5. Add the remaining lime juice and a pinch of sea salt.
  6. Toss gently and set aside.
  7. Heat a lightly oiled cast-iron skillet or grill pan over medium-high heat.
  8. Remove the chicken from the marinade and discard the excess.
  9. Cook the chicken for 5 to 6 minutes per side until the internal temperature reaches 74°C (165°F).
  10. Transfer the chicken to a cutting board and let it rest for 5 minutes.
  11. Slice the chicken and arrange it on serving plates.
  12. Top generously with the avocado salsa and serve immediately.

Notes

Do not marinate the chicken for more than 1 hour, as the lime juice can begin to affect the texture. Toss the avocado with lime juice immediately to keep it fresh and vibrant.
