Ingredients
- For the Espresso Oatmeal Dough Base:
- 3/4 cup (1 1/2 sticks / 170 g) unsalted butter, softened to room temperature
- 3/4 cup (150 g) packed light brown sugar
- 1/2 cup (100 g) granulated sugar
- 1 large egg, room temperature
- 1 large egg yolk, room temperature
- 2 tsp pure vanilla extract
- 1 tbsp instant espresso powder
- 1 tsp hot water
- 1 1/4 cups (156 g) all-purpose flour
- 1 3/4 cups (150 g) old-fashioned rolled oats
- 1 tsp baking soda
- 1/2 tsp fine salt
- 1/2 tsp ground cinnamon (optional)
- 3/4 cup (120 g) English toffee bits (such as Heath Bits ‘O Brickle)
- For Topping and Finishing:
- 2 tbsp extra English toffee bits
- Flaky sea salt (such as Maldon), for sprinkling (optional)
Instructions
- Prepare Espresso Concentration: In a small bowl, dissolve 1 tablespoon of instant espresso powder in 1 teaspoon of hot water. Stir until completely smooth and liquid, then set aside to cool slightly.
- Cream Butter and Sugars: In a large mixing bowl, beat the softened unsalted butter, packed light brown sugar, and granulated sugar together on medium-high speed for 2–3 minutes until light, pale, and creamy.
- Mix Wet Ingredients and Espresso: Add the room-temperature whole egg, egg yolk, pure vanilla extract, and slightly cooled espresso concentrate to the creamed butter mixture. Beat until the wet ingredients are smooth and completely combined.
- Combine Dry Ingredients: In a separate medium bowl, whisk together the all-purpose flour, baking soda, fine salt, and optional ground cinnamon. Gradually add the dry mixture to the butter and espresso base, mixing on low speed just until incorporated and no dry flour streaks remain.
- Fold in Oats and Toffee Bits: Using a rubber spatula, gently fold in the old-fashioned rolled oats and 3/4 cup (120 g) of English toffee bits until evenly distributed throughout the thick cookie dough.
- Chill Dough for 30 Minutes: Cover the mixing bowl and refrigerate the cookie dough for at least 30 minutes. This essential chilling step helps prevent excessive spreading during baking and produces thicker, chewier oatmeal cookies.
- Shape and Top Dough Balls: Preheat your oven to 350°F (175°C) and line two large baking sheets with parchment paper. Scoop approximately 2 tablespoons of chilled dough (~40 g each) per cookie and arrange the portions about 3 inches apart on the prepared baking sheets. Gently press a few of the extra English toffee bits onto the top of each dough ball.
- Bake Until Edges Are Crisp and Golden: Bake at 350°F (175°C) for 10–12 minutes, or until the cookie edges are golden brown and slightly crisp while the centers remain soft and pale. Rotate the baking sheets halfway through baking if needed for even browning.
- Cool and Finish with Sea Salt: Allow the cookies to rest on the baking sheets for 5–10 minutes to finish setting before carefully transferring them to a wire cooling rack. If desired, sprinkle lightly with flaky sea salt while the cookies are still warm to enhance the rich espresso and buttery toffee flavors.
Notes
- Use Espresso Powder, Not Ground Coffee: Always choose instant espresso powder rather than ground coffee beans. Instant espresso powder dissolves completely in hot water without leaving gritty, bitter coffee grounds in the cookie dough.
- Stick to Old-Fashioned Rolled Oats: Old-fashioned rolled oats provide the necessary chewiness and moisture absorption for these thick oatmeal cookies. Quick oats break down too quickly and can produce a drier, softer crumb.
- Extra Chill for Tall Cookies: For even thicker bakery-style cookies, place the pre-shaped cookie dough balls in the freezer for an additional 15 minutes immediately before baking. This helps maintain their height and prevents excessive spreading in the oven.
