- 4 cups sliced peaches
- ½ cup granulated sugar
- ¼ cup packed light brown sugar
- 1 tbsp cornstarch
- 1 tsp ground cinnamon
- ¼ tsp ground nutmeg
- 1 tbsp fresh lemon juice
- ½ cup (115g) unsalted butter
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1 tbsp baking powder
- ½ tsp fine sea salt
- 1 cup (240ml) whole milk, room temperature
Instructions
- Preheat the oven to 175°C (350°F).
- Place butter into a 9×13-inch baking dish and melt in the oven for 5 minutes.
- Remove the baking dish and set aside.
- In a saucepan, combine peaches, granulated sugar, brown sugar, cornstarch, cinnamon, nutmeg, and lemon juice.
- Cook over medium heat for 4 to 5 minutes until peaches soften slightly and juices release.
- In a large bowl, whisk together flour, sugar, baking powder, and sea salt.
- Pour in the milk and stir just until combined.
- Pour the batter evenly over the melted butter in the baking dish without stirring.
- Spoon the warm peach mixture and juices evenly over the batter without stirring.
- Bake for 40 to 45 minutes until the crust is golden brown and peach juices bubble around the edges.
- Cool slightly before serving warm.
Notes
Do not stir the batter and peaches together after layering to achieve the signature cobbler texture. Serve warm with vanilla ice cream for the ultimate dessert.
