Description

This Ham Hash Brown Breakfast Casserole combines crispy hash browns, savory ham, cheddar cheese, and a creamy egg custard for an easy make-ahead breakfast or brunch favorite.


Ingredients

  • 3 cups shredded hash brown potatoes, thawed and squeezed dry
  • 1 ½ cups diced cooked ham
  • ½ cup green onions, sliced
  • 1 ½ cups sharp cheddar cheese, shredded
  • 6 large eggs
  • 1 ½ cups whole milk or half-and-half
  • ¼ tsp salt
  • ¼ tsp freshly cracked black pepper

Instructions

  1. Preheat oven to 175°C (350°F).
  2. Grease a 9×13-inch baking dish.
  3. Spread the hash browns evenly across the bottom of the dish.
  4. Top with diced ham and sliced green onions.
  5. Sprinkle the shredded cheddar cheese evenly over the top.
  6. In a medium bowl, whisk together eggs, milk, salt, and black pepper until smooth and slightly frothy.
  7. Pour the egg mixture evenly over the casserole layers.
  8. Make sure the custard reaches all corners of the dish.
  9. Bake uncovered for 40–45 minutes.
  10. Cook until the center is set and a knife inserted into the middle comes out clean.
  11. Remove from the oven and let rest for 5–10 minutes.
  12. Slice into squares and serve warm.

Notes

Squeezing excess moisture from the hash browns helps prevent a watery casserole. This dish can be assembled the night before and baked fresh in the morning.
