Description
Tender yogurt-marinated chicken simmered in a rich, creamy tomato butter sauce infused with aromatic Indian spices. This easy homemade Butter Chicken delivers restaurant-quality flavor in every bite.

- 600g boneless, skinless chicken thighs, cut into bite-sized pieces
- 120g plain Greek yogurt
- 1 tbsp minced garlic
- 1 tbsp minced fresh ginger
- 1 tbsp Kashmiri chili powder (or regular chili powder)
- 1 tsp ground cumin
- 1 tsp garam masala
- 1 tsp kosher salt
- 2 tbsp ghee or neutral oil
- 2 tbsp unsalted butter, divided
- 1 large yellow onion, finely chopped
- 1 can (400g) tomato puree or passata
- 1 tsp sugar
- 150ml heavy cream
- 1 tbsp dried fenugreek leaves (kasuri methi), crushed
Instructions
- In a large bowl, combine the yogurt, garlic, ginger, chili powder, cumin, garam masala, and salt. Add the chicken and coat well. Cover and marinate for at least 30 minutes or overnight.
- Heat the ghee or oil in a large skillet over medium-high heat. Sear the marinated chicken in batches for 3 to 4 minutes per side until browned. Remove and set aside.
- Reduce the heat to medium and melt 1 tablespoon of butter in the same skillet. Cook the onion until soft, then stir in the tomato puree and sugar. Simmer for 5 minutes until slightly thickened.
- Reduce the heat to low. Stir in the heavy cream until smooth.
- Return the chicken to the skillet along with any juices. Simmer gently for 8 to 10 minutes until the chicken is fully cooked and the sauce is rich and creamy.
- Stir in the remaining butter and the crushed dried fenugreek leaves. Mix until the butter melts completely, then serve hot with naan or basmati rice.
Notes
For the most authentic flavor, marinate the chicken overnight. Add the butter at the end of cooking for a silky finish, and avoid boiling the sauce after adding the cream to prevent it from separating.
