Description

A hearty and comforting crockpot pierogi casserole with tender potato and cheddar pierogies, smoky kielbasa, creamy cheese sauce, and a bubbly sharp cheddar topping.


Ingredients

  • 1 box (16 oz / 12 count) frozen potato and cheddar pierogies, unthawed
  • 14 oz (400g) smoked kielbasa or Polish sausage, sliced into 1/2-inch rounds
  • 1 cup (240ml) low-sodium chicken broth or vegetable broth
  • 8 oz (225g) cream cheese, softened and cubed
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp freshly cracked black pepper
  • 1.5 cups (150g) sharp cheddar cheese, shredded
  • 1/4 cup fresh chives or green onions, sliced
  • 4 slices cooked bacon, crumbled, optional

Instructions

  1. Lightly grease the inside of a 5 to 6-quart crockpot with non-stick cooking spray.
  2. Arrange the frozen pierogies in an even layer at the bottom of the slow cooker, then scatter the sliced kielbasa evenly over the top.
  3. Pour the chicken broth over the pierogies and sausage.
  4. Season with garlic powder, onion powder, and black pepper.
  5. Scatter the cubed cream cheese evenly across the top.
  6. Cover with the lid and cook on LOW for 3 to 4 hours or HIGH for 1.5 to 2 hours, until the pierogies are tender and hot and the cream cheese is fully melted.
  7. Gently stir the casserole with a wooden spoon to blend the melted cream cheese and broth into a creamy sauce.
  8. Top with shredded sharp cheddar cheese, cover, and cook for an additional 10 to 15 minutes until the cheddar is melted and bubbly.
  9. Garnish with sliced green onions and crumbled bacon if desired.
  10. Serve warm.

Notes

Keep the pierogies frozen when adding them to the crockpot. Cook on LOW for 3 to 4 hours or HIGH for 1.5 to 2 hours, then add the cheddar during the final 10 to 15 minutes so it melts into a bubbly topping.
