Description
A moist and tender coconut loaf cake made with rich coconut milk, sweetened shredded coconut, and buttery vanilla flavor, finished with an optional coconut glaze.

- 1 ½ cups (190g) all-purpose flour
- 1 tsp baking powder
- ½ tsp kosher salt
- 1 cup (200g) granulated sugar
- ½ cup (115g) unsalted butter, melted, or melted coconut oil
- 2 large eggs, room temperature
- ¾ cup (180ml) full-fat coconut milk, well-shaken
- 1 tsp pure vanilla extract or coconut extract
- 1 cup (100g) sweetened shredded coconut
- 1 cup (120g) powdered sugar, for optional glaze
- 2 to 3 tbsp coconut milk, for optional glaze
Instructions
- Preheat the oven to 350°F (175°C).
- Grease a standard 9×5-inch loaf pan and line it with a sling of parchment paper, leaving an overhang on the sides for easy removal.
- In a large mixing bowl, vigorously whisk together the melted butter and sugar until well combined.
- Add the eggs one at a time, whisking until smooth after each addition.
- Stir in the coconut milk and vanilla or coconut extract.
- Sprinkle the flour, baking powder, and salt over the wet ingredients.
- Use a rubber spatula to gently fold the mixture together just until the streaks of flour disappear.
- Gently fold in the shredded coconut. Do not overmix.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50 to 60 minutes, checking the cake at the 40-minute mark.
- If the top is browning too quickly, loosely tent the pan with aluminum foil for the remaining bake time.
- Check for doneness by inserting a toothpick into the center; it should come out clean.
- Let the cake cool in the pan for 15 minutes.
- Use the parchment sling to transfer the loaf to a wire rack and cool completely.
- If desired, whisk together the powdered sugar and coconut milk to make the glaze.
- Drizzle the coconut glaze over the completely cooled loaf before slicing and serving.
Notes
Check the loaf at 40 minutes and loosely tent with foil if the top is browning too quickly. Let the cake cool completely before glazing for the cleanest finish.
