Description

Soft baked cake donut bars with a warm nutmeg aroma and finished with a glossy bakery-style maple glaze.


Ingredients

  • 2 cups (240g) all-purpose flour
  • 2 tbsp cornstarch
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • 1 tsp fine sea salt
  • ½ tsp ground nutmeg
  • ⅔ cup (130g) granulated sugar
  • 2 large eggs, room temperature
  • 3 tbsp unsalted butter, melted
  • 2 tbsp vegetable oil
  • ¾ cup (180ml) real buttermilk
  • 2 cups (250g) powdered sugar, sifted
  • ⅓ cup pure maple syrup
  • 2 tbsp unsalted butter, melted
  • 1 tsp maple extract
  • 1 to 2 tbsp warm heavy cream

Instructions

  1. Preheat the oven to 175°C (350°F).
  2. Grease a donut bar pan or standard donut pan thoroughly.
  3. In a large bowl, whisk together flour, cornstarch, baking powder, baking soda, sea salt, nutmeg, and granulated sugar.
  4. In a separate bowl, whisk together eggs, melted butter, vegetable oil, and buttermilk.
  5. Pour the wet ingredients into the dry ingredients.
  6. Mix gently with a spatula just until combined and no flour streaks remain.
  7. Transfer the batter to a piping bag or zip-top bag.
  8. Pipe the batter evenly into the donut bar cavities.
  9. Bake for 10 to 12 minutes until the tops spring back lightly when touched.
  10. Cool in the pan for 5 minutes before transferring to a wire rack.
  11. In a shallow bowl, whisk together powdered sugar, maple syrup, melted butter, and maple extract.
  12. Add warm heavy cream gradually until the glaze reaches a smooth ribbon consistency.
  13. Dip the tops of the slightly warm donut bars into the maple glaze.
  14. Allow excess glaze to drip off before placing the bars back on the rack.
  15. Let the glaze set for 15 minutes before serving.

Notes

Do not overmix the batter to keep the donut bars soft and tender. Glazing the bars while slightly warm helps create the signature glossy bakery finish.
