Crispy, cheesy broccoli bites baked to golden perfection — perfect for kids and adults alike! These bites are packed with veggies, protein, and flavor.

- 2 cups broccoli florets (finely chopped or “riced”)
- 1–2 large eggs
- 1 ½ to 2 cups shredded cheddar cheese (or mix of cheddar & Parmesan)
- ½ cup breadcrumbs or panko (or almond flour / gluten-free crumbs)
- ¼ cup finely chopped onion or shallot (optional)
- ½ tsp garlic powder
- ½ tsp onion powder
- Salt & pepper to taste
- Cooking spray or light oil
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment or lightly grease.
- Wash and steam or blanch broccoli for 2–3 minutes until just tender, then chop or pulse in a food processor until finely minced or riced. Drain thoroughly to remove excess moisture.
- In a large bowl, combine broccoli, eggs, cheese, breadcrumbs, onion (if using), garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Form 1–1½ Tbsp-sized balls and place on the prepared baking sheet. Flatten slightly into patties.
- Bake for 15 minutes, then flip and bake another 8–10 minutes until golden brown and crispy.
- Let cool slightly before serving. Enjoy warm with dipping sauces like ranch, yogurt-herb dip, or ketchup.
Notes
For gluten-free: use gluten-free breadcrumbs or almond flour. For dairy-free: use dairy-free shredded cheese. For kids: make smaller, softer bites and omit extra salt.
