Description

Crispy, cheesy broccoli bites baked to golden perfection — perfect for kids and adults alike! These bites are packed with veggies, protein, and flavor.


Ingredients

Scale
  • 2 cups broccoli florets (finely chopped or “riced”)
  • 12 large eggs
  • 1 ½ to 2 cups shredded cheddar cheese (or mix of cheddar & Parmesan)
  • ½ cup breadcrumbs or panko (or almond flour / gluten-free crumbs)
  • ¼ cup finely chopped onion or shallot (optional)
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt & pepper to taste
  • Cooking spray or light oil

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment or lightly grease.
  2. Wash and steam or blanch broccoli for 2–3 minutes until just tender, then chop or pulse in a food processor until finely minced or riced. Drain thoroughly to remove excess moisture.
  3. In a large bowl, combine broccoli, eggs, cheese, breadcrumbs, onion (if using), garlic powder, onion powder, salt, and pepper. Mix until well combined.
  4. Form 1–1½ Tbsp-sized balls and place on the prepared baking sheet. Flatten slightly into patties.
  5. Bake for 15 minutes, then flip and bake another 8–10 minutes until golden brown and crispy.
  6. Let cool slightly before serving. Enjoy warm with dipping sauces like ranch, yogurt-herb dip, or ketchup.

Notes

For gluten-free: use gluten-free breadcrumbs or almond flour. For dairy-free: use dairy-free shredded cheese. For kids: make smaller, softer bites and omit extra salt.
