Description

These Crispy Shrimp Tacos with Mango Salsa feature golden panko-crusted shrimp tucked into warm tortillas and topped with a fresh, juicy mango salsa. Finished with chipotle crema and a squeeze of lime, they’re the perfect combination of crunchy, sweet, spicy, and tangy flavors.


Ingredients

  • 1 ripe mango, peeled and finely diced
  • 1/2 red bell pepper, finely diced
  • 1/4 cup red onion, finely chopped
  • 1/2 jalapeño, seeded and minced
  • 1/3 cup fresh cilantro, chopped
  • Juice of 1 fresh lime
  • 1/4 tsp sea salt
  • 1 lb (450 g) large shrimp, peeled and deveined
  • 1/3 cup cornstarch
  • 1 large egg, beaten
  • 1 cup Japanese panko breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 8 small corn or flour tortillas
  • Lime wedges, for serving
  • Chipotle crema, for serving

Instructions

  1. Combine the mango, red bell pepper, red onion, jalapeño, cilantro, lime juice, and sea salt in a bowl.
  2. Stir gently and refrigerate while preparing the shrimp.
  3. Mix the cornstarch, garlic powder, and smoked paprika in one shallow bowl.
  4. Place the beaten egg in a second bowl and the panko breadcrumbs in a third bowl.
  5. Pat the shrimp dry.
  6. Coat each shrimp in the seasoned cornstarch, dip into the egg, then press into the panko breadcrumbs.
  7. Heat about 1/4 inch of oil in a skillet over medium-high heat or preheat an air fryer to 200°C (400°F).
  8. Cook the shrimp for 2 to 3 minutes per side until golden brown and crispy.
  9. Drain the cooked shrimp on paper towels.
  10. Warm the tortillas in a dry skillet until soft and pliable.
  11. Fill each tortilla with 3 to 4 crispy shrimp.
  12. Top generously with the chilled mango salsa.
  13. Finish with chipotle crema and serve with fresh lime wedges.

Notes

For the crispiest shrimp, pat them completely dry before breading and serve immediately after frying or air-frying. The chilled mango salsa adds a refreshing contrast to the warm, crunchy shrimp.
