- 3 large potatoes, peeled and boiled
- 3 tablespoons cornstarch (or potato starch)
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder (optional)
- 1/4 cup grated Parmesan cheese (optional for extra crispiness)
- For Coating & Frying:
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup breadcrumbs (panko for extra crunch)
- Oil for frying (vegetable or canola)
- Optional Garnish:
- Fresh parsley or chives
- A sprinkle of chili flakes for a kick
Instructions
- Boil & Mash the Potatoes: Peel and cube the potatoes, then boil until tender. Drain and mash until smooth. Let cool slightly.
- Form the Dough: Add cornstarch, salt, pepper, garlic powder, and Parmesan cheese. Mix until smooth and non-sticky. Add more starch if needed.
- Shape the Rings: Roll dough flat (1/2-inch thick). Cut circles with a cookie cutter, then cut smaller holes in the center. Reuse scraps.
- Bread the Rings: Dip each ring in flour, then egg, then breadcrumbs. Double-coat for extra crunch.
- Fry Until Golden: Heat oil to 350°F (175°C). Fry rings 2–3 minutes per side until golden and crispy. For baking, brush with oil and bake at 400°F (200°C) for 20–25 minutes, flipping halfway.
- Serve & Enjoy: Drain on paper towels, sprinkle with salt and parsley, and serve hot with your favorite dips.
